Tea Scones
200g Self-Raising Flour
25g Raisins
50g Butter or Margarine
2 Eggs or Egg Yolk
25g Caster Sugar (optional)
2 Tablespoons of Milk
1. Preheat oven to 220c
2. Sieve flour intp mixing bowl. Rub in fat until the mixture looks like breadcrumbs. Add sugar and raisins if using.
3. Beat 1 egg and milk in a small bowl and stir into the mixture using a wooden spoon. Do not beat!
4. Turn onto a floured work surface and knead lightly
5. Roll to at least 1cm of thickness and cut into round shapes with a cutter.
6. Place on a greased baking tray; brush tops with the second egg, beaten.
Wholemeal Bread:
200g Wholemeal Flour
150g white flour
25g bran or oatmeal
25g wheatgerm
1/4 teasp. salt
1/2 teaspoon bread soda
1 dessert spoon brown sugar
50g butter/ margarine
35ml buttermilk
1.Preheat oven to 200c/400f/gas 6
2.Sieve the white flour, salt and bread soda into a mixing bowl. Add wholemeal, bran, wheatgerm and sugar.
3.Rub in butter. Make a well in the centre of the mixture and add milk. Mix to a soft wet consistency.
4.Place in a greased round tin and a cut a cross on the top. (A loaf tin may also be used, but bread will take longer to cook)
5.Bake in the preheated oven for 40-50 minutes.
6.Test. You will know that it is done if the base makes a hollow sound when tapped.
7.Turn onto a wire tray to cool , and use within a day or two.
Chocolate Chip Cookies
100g butter
150g self-raising
50g caster sugar
50g choc chips
1.Grease baking tins if not non stick
2.Beat butter/margarine and sugar until fluffy. Stir in flour and chocolate to make a soft dough. Knead with the hands if necessary.
3. Preheat oven to 170c/160f/gas 4
4. Divide mixture into 14-15 even-sized balls place apart on baking tins and flatten well with the back of a table spoon.
5.Cookfor 12-15 minutes until evenly browned. Cool a little and then lift off and cool on a wire tray.
Chicken Risotto
200g White Rice
1 Med Onion
2 Cloves of Garlic
1 Fillet of Chicken
1 Stock Cube (chicken)
2 Rashers
1 Green or Red Pepper
1. Dissolve stock cube in 500ml of boiling water
2. Chop pepper, garlic and onioninto small pieces
3. Cut chicken and rashers into small chunks and fry
4. Add onion, pepper and garlic to the pan
5. Once cooked add the rice and stock to the pan
6. Allow to simmer until stock has been absorbed
Pizza
200g Plain Flour
Pinch of Salt
Tablespoon of Oil
125ml Water
Topping:
Tablespoon of Oil
1 Small Onion-Chopped
1/3 Tube of Tomatoe puree
100g Cheddar Cheese
(personalise with choice of own ingredients)
Chinese Stir-Fry (Meat or Vegetarian)
200 g meat - Chicken fillet, leen lamb, pork fillet or lean beef
1 small carrot
1 red pepper
1 clove garlic
1 cm piece root ginger (optional)
4 mushrooms
4 scallions or half onion
1 small courgette
50 g sweetcorn (optional)
25 g peanuts/cashew nuts
2 tablespoons vegetable oil
1 tablespoon soy sauce
1 tablespoon sherry (optional)
1 rounded teaspoon cornflour
Quarter teaspoon salt, pepper
1. Prepare accompaniment- rice or noodles
2. Wash and dry meat and cut into matchstick-like strips
3.Wash and prepare all vegetables according to type, crush garlic, cut the carrot into thin batons, the pepper into strips and the broccoli into florets. Peel ginger and dice finely.
4. Thinly slice mushrooms, the courgette and scallions and drain the sweetcorn.
5. Heat oil, cook meat for 10 minutes, then add the garlic, ginger and carrot and cook for 5-6 minutes. Use two wooden spoons to stir the stir-fry.
6. Add the broccoli and pepper. Cook for 5 minutes and finally add the remaining vegetables and nuts. Continue to stir-fry until vegetables are cooked but to a crisp.
7. Dissolve the cornflour in a little liquid and add to wok with the soy sauce(sherry) and seasoning. Stir to coat the vegetables and cook the cornflour.
Eve's pudding
2 large cooking apples, peeled, cored and sliced.
1 tablespoon water
2 tablespoon sugar
1. Put apples into a greased ovenproof dish with water . Sweeten with sugar.
2. Make the "all in one" mix using 100 g of sugar, 100 g soft butter, 2 eggs and 125 g self-raising flour. Spoon it over the apples.
3. Bake at 170c/Fan 160c/Gas mark 2-3 for 40-45 minutes until the pudding is cooked.
